Ingredients
Rosemary syrup
- Rosemary sprigs
- 1 part water
- 1 part sugar
Mocktail
- 30 mL Gimber
- 200 mL tonic, e.g. Elderflower tonic
- 20 mL cassis juice
- 10 mL rosemary syrup
Instructions
Prepare the rosemary syrup well in advance to ensure it can cool down completely. Make sure all other mocktail ingredients are chilled as well.
Strip the rosemary leaves from the sprigs and chup them roughly. Combine the water and sugar in a saucepan and bring to a boil. Add the rosemary leaves to the sugar syrup and let simmer for 10 minutes on the stovetop. Remove from the heat and let cool down at room temperature. Pass the syrup through a sieve to remove the rosemary leaves and transfer to a small jar. Move the syrup to the fridge to cool down completely. The syrup can be stored in the fridge for a couple of weeks.
Combine all the ingredients for the mocktail and add ice to taste.
