Nona June Mocktail with Pomegranate and Mint


Ingredients

Mint syrup

  • Mint leaves
  • 1 part water
  • 1 part sugar

Mocktail

  • 15 cL Nona June
  • 60 cL pomegranate juice
  • 125 cL tonic
  • 7.5 cL mint syrup

Instructions

Prepare the mint syrup well in advance to ensure it can cool down completely. Make sure all other mocktail ingredients are chilled as well.

Roughly chop the mint leaves. Combine the water and sugar in a saucepan and bring to a boil. Add the mint leaves to the sugar syrup and let simmer for 10 minutes on the stovetop. Remove from the heat and let cool down at room temperature. Pass the syrup through a sieve to remove the mint leaves and transfer to a small jar. Move the syrup to the fridge to cool down completely. The syrup can be stored in the fridge for a couple of weeks.

Combine all the ingredients for the mocktail and add ice to taste.

Tip

Make the pomegranate juice yourself by deseeding a pomegranate (works best when fridge-cold) and juice the seeds using a passe-vite.
