Taboulé


Ingredients

For one large bowl

  • 500g couscous, rinsed (to remove starch)
  • 200ml olive oil
  • Juice of half lemon
  • 100g onion, chopped
  • 500g tomato, chopped
  • 250g cucumber, chopped
  • Salt, pepper, parsley and mint (finely chopped) to taste
  • Additional seasonal ingredients:
    • 250g peach, chopped

Instructions

Mix all the ingredients together in a large bowl. Cover the bowl then put in the fridge for at least 12h.
