Ingredients
For one large bowl
- 500g couscous, rinsed (to remove starch)
- 200ml olive oil
- Juice of half lemon
- 100g onion, chopped
- 500g tomato, chopped
- 250g cucumber, chopped
- Salt, pepper, parsley and mint (finely chopped) to taste
- Additional seasonal ingredients:
- 250g peach, chopped
Instructions
Mix all the ingredients together in a large bowl. Cover the bowl then put in the fridge for at least 12h.
